It is also said that green in the Irish flag represents the Catholics of Ireland who believe in saints and the orange represents the Protestants, thus green to celebrate St. Patrick.  The pinch may have originally been meant for those wearing orange on St. Patrick's Day and payback for snubbing the celebration of the Catholic saint.
