Great Recipts from the kitchen of Dee Francis!
KOALA CRISPY TREATS
3 tablespoons Smart Balance Spread
4 cups Jett Puff mini-marshmallows
6 cups Koala Crisp Cereal
-Melt spread over low heat. Add marshmallows and stir until melted. Remove from heat.
-Add cereal and stir until well coated,
-Using wax paper, press mixture into a 13x9x2 pan coated with PAM. Let cool, then eat!!!
ROASTED CHICKEN AND VEGGIES
1 Whole Chicken
½ cup onion
2 small sweet potatoes, cubed
4 small red potatoes, cubed
1 cup small baby carrots
Seasoning: salt, pepper, cumin, rosemary
PAM
Water
Preheat oven to 400* F
-Spray 13x9x2 pan with PAM
-Rinse and clean chicken. Place in pan and then surround with veggies.
-Add 3 tablespoons water around the pan. Spray chicken and veggies with PAM. Then season chicken and veggies to taste. Place foil tent over chicken. Cook at 400* for 1 hour. Take foil tent off and increase heat to 425* F. Cook until chicken skin is golden brown (roughly 20 min).
-Slice and serve!!!
BLUEBERRY MUFFINS
1 ¾ cup Rice Flour
½ cup Sugar
1 ½ tsp. Salt
1 ¾ cup Water
2 Eggs
½ cup Oil
1 tsp. pure vanilla (optional)
2 cups Beech-Nut Baby Rice Cereal
1 tbsp. and 2 tsp. Baking Powder
1-2 cups Blueberries, fresh or frozen
-Combine flour, sugar and salt. Add water, eggs, and oil and optional vanilla; mix well.
-Stir together rice cereal and baking powder and add to above mixture. Mix well and fold in desired amounts of fruit.
-Fill paper-lined muffin tins almost full. Bake, with a pan of water in the oven until golden.
-Cool 5 minutes before removing from tins.
These reheat well and freeze nicely. Remember get creative… try new things.
