Deer Chili

1 tablespoon whole cumin seed
1/4 pound bacon diced
2 pounds ground deer
1/2 - 1 cup chili powder - to taste
2 large yellow onions chopped
6 cloves of garlic minced
1 bell pepper chopped
1 teaspoon whole oregano leaves
1-2 tablespoons salt - to taste
1/4 cup Worcestershire sauce
2 28 oz cans of whole tomatoes
1 6 oz can tomato paste
2 16 oz cans of dark red kidney beans
optional - 6 roasted serrano peppers chopped
Directions
Toast cumin seeds at 375 in oven until fragrant, then crush slightly with mortar and pestal. Roast serrano peppers until charred - if using, then chop. Saute bacon in a dutch oven over medium heat until clear. Add ground deer, chili powder, Worcestershire, & salt. Cook until meat is no longer pink. Add onions, garlic, peppers, and oregano. Cook and stir until vegetables start to wilt. Add tomatoes (with juice) and tomato paste! . Break up tomatoes with your hands. Stir everything together, cover, reduce heat, and simmer for 2 hours. Add beans and adjust seasonings. The longer it simmers the better. Serve over Frito chips and top with grated cheese
