Light Cheesecake

1 crushed graham craker
2/3 cup boiling water
1 package (4 serving size) sugar free gelatin any flavor
1 cup low fat cottage cheese
1 8oz. container of low fat cream cheese
2 cups sugar free fat free whipped topping
Spray pie plate with no stick cooking spray.
Sprinkle half of the graham cracker onto the inside edges of the pie plate.
Stir boiling water and gelatin mix in large bowl until completely dissolved.
Pour gelatin mixture and cheeses into blender. Blend on medium speed until smooth.
Pour back into large bowl & sit in whipped topping.
Pour the mixture into pie pan.
Sprinkle with the rest of the graham cracker
Refrigerate 4 hours until set.
You can store leftovers in the refrigerator.
