Tabouli

- 1/4 cup fine cracked wheat (soaked in lemon juice)
- 1 cup minced fresh parsley leaves
- 1/2 cup minced fresh mint leaves
- 1/2 cup finely chopped yellow onion
- 1 tomato, diced
- 1 cucumber, seeded and diced
- 2-3 green onion sliced
- 3 tablespoons olive oil
- 3 tablespoons lemon juice, or to taste
- 1 teaspoon salt
