Cured Salmon

2 pounds of salmon
2 tbsp of extra virgin olive oil
1/2 cup of brown sugar
1/4 cup of salt
1 1/2 of chopped, fresh herbs
2 tbsp of lime juice
2 tbsp orange juice
1/8 tsp of cardamon
1/4 tsp of nutmeg
1/2 tsp chili powder
1/2 tsp paprika
1/4 cup of chopped scallions
1 garlic clove chopped

Combine all ingredients in a bowl and mix thoroughly, this will create a paste.
Take your salmon and rub it all over with the paste Once you have rubbed the fish, tightly wrap the salmon in cellophane Place wrapped salmon between two deep pans and weigh it down with whatever you have handy that won't be damaged in the refrigerator. Place the pans with salmon in the refrigerator for 6 hours.
Unwrap the salmon, slice and serve.
