Salsa Vinaigrette

Everything about this dressing can be customized to your tastes!
1 tomato diced
¼ cup red onion
½ cup olive oil
¼ cup red wine vinegar
½ cup chopped cilantro
¼ cup freshly squeezed lime juice
1 clove minced garlic
½ teaspoon sea salt
1/8 teaspoon finely ground black pepper
Combine in a cruet and shake to perfection.
Serve over salad alongside your tamale pie.
For some added crunch to your salad, cut some tortillas into strips, brush with olive oil and sprinkle with taco seasoning.
Toss with the salad.
