1 1/2 pound chicken breast cut into 2 inch cubes
1/3 cup olive oil
1 large red onion julienne
4 tablespoons saffron emulsion
1 teaspoon turmeric
Juice from 3 limes
2 teaspoons kosher salt
1 teaspoon ground black pepper
In a large mixing bowl, mix oil, onion, saffron emulsion, turmeric, lime juice, salt, pepper. Mix
Together. Next add chicken and marinade for 1/2 hours up to 3 hours.
Place chicken on skewers and grill. Cook till done.
