Individual Apple Pies

Filling
2 tablespoons butter
6 apples such as granny smith, McIntosh, cut and cored into ½ inch cubs
½ to ¾ cup granulated sugar
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon all purpose flour
2 each pie crust dough
 
In pie pan cut crust to fit and push into mold.  Fork holes into crust.  Next in a large saucepan, melt butter over medium heat.  Add apples, sugar, cinnamon and vanilla.  Cook, stirring frequently, just until mixture comes to a boil.  Remove from heat and sprinkle with flour.  Stir into mixture.
 
Fill pie crust with apple mixture.  Place tops on top of filling and make slits for steam. Brush with butter and sprinkle sugar on top. Bake at 350 for 30-35 minutes or until golden brown.
