Tomato Orange Soup
˝ stick butter
˝ onion diced
2 cans diced tomatoes
Salt and pepper to taste
˝ teaspoon thyme
1 cup orange juice
˝ cup heavy cream
In a sauce pan melt butter. Add onion and sauté. Add tomatoes, salt, pepper, and thyme.
Bring to a boil, reduce heat and simmer for about 15 minutes or until slightly thickened.
Stir in orange juice and heavy cream a little at a time. Heat for about 5 minutes or until
Slight boil occurs. Serve when ready.
