Chocolate Snowballs

1 1/4 cup butter
2/3 cup sugar
2 teaspoons vanilla extract
2 cups all purpose flour
1/2 cup cocoa powder
2 cups finely chopped pecans (optional)
Confectioner’s sugar for rolling
 
Preheat oven to 350 degrees.  Beat butter with mixer until fluffy and gradually add the sugar.  Beat until light and fluffy.  Add the vanilla.  Into another bowl, add flour, cocoa powder and mix.  Add to the creamed mixture.  Fold pecans if desired.  Form the mixture into marble sized balls and bake for 20 minutes or until done.  Cool and roll in confectioner’s sugar.  Enjoy.
