You might not know but rice in Arkansas is accounts for 49 percent of all rice produced in the United States. Katie Waldrip, Miss Lee County Rice... stopped by the studio to talk about rice production in Arkansas and the upcoming Miss Arkansas Rice contest.

Katie’s Fun Fruity Rice Salad

3          cups cooked rice                                              Combine cooked rice, milk, and

1 ½      cups milk                                                          sugar.  Cook until thick and creamy,

¼         cups sugar                                                        about 10 to 15 minutes, stirring

1          cup pineapple tidbits, drained                            occasionally.  Cool.  Fold in

1          can (8 oz.) mandarin oranges, drained   remaining ingredients.  Spoon into

¼         cup maraschino cherries, drained                       serving dishes and chill.

1          cup miniature marshmallows

½         cup flaked coconut                                           Makes 12 servings (½ cup each).

¼         cup nut meats, chopped                                    Garnish with additional fruit, if

1          container (8 oz.) whipped topping                     desired.
