At the Fair: First Lady's Pie Contest

It's a busy day for cooking contests at the Arkansas State Fair.

First up, inside the Arts & Crafts Building this morning, it was the annual First Lady's Pie Contest.

Arkansas First Lady Ginger Beebe decided on custard pie as the required filling for this year's
contest. Chefs from the Governor's Mansion were on hand to judge the contest.

They tell us it was a difficult decision (possibly requiring a few extra bites), but the blue ribbon
(and $100 first place prize) went to junior high school student Emma Williams, of Searcy, who
presented a White Chocolate Custard Pie.

Williams' mom Ruth Williams, came in third and won a $50 prize with her Coconut Custard Pie. Second place went to Carolyn Wynn of Star City, who won a $75 prize with her Egg Custard Pie entry. [Click here for the recipes].

The contest was topped off with the announcement of the required recipe for next year's First Lady's Pie Contest. It will be fresh apple pie.

This was the second year in a row for Emma Williams, a student at Harding Academy, to win the First Lady's Pie Contest.

Last year her version of Lemon Ice Box Pie took the blue ribbon.

Here's the recipe:
1 small can of lemonade concentrate
1 can of sweetened condensed milk
1 small container of Cool Whip

Combine the lemonade and sweetened condensed milk, mixing well. Fold in the Cool Whip. Pour into a ready made graham cracker crust or homemade crust. Chill before serving.

This afternoon at the fair is the Great American Spam Championship. Last year, Emma Williams' sister Meredith Williams won the blue ribbon and went on to win the National Junior Spam Champion title.
